Vegan “Chikn” Choila
—500g seitan (can sub tofu or tempeh)
—250g chopped leeks
—thumb sized ginger peeled and minced
—1 tbsp mustard oil
— 1/2 tbsp fenugreek (methi) seeds
— 1 tsp turmeric (haldi) powder
— lemon juice and salt to taste
Add ginger, leeks, salt to the chikn.
Heat mustard oil, add methi seeds
Sprinkle haldi powder and when the methi starts to darken, remove from heat
Pour the hot oil over the chikn mixture and make sure you catch the seeds in a sieve
Sprinkle with lemon juice and enjoy hot or cold! Delish as a sandwich too ?
