Surprisingly moist and delicious muffins with #zucchini and homemade -#glutenfree all purpose flour! I promise your kids will love this- and you can secretly get some veggies and fibre into them ?
Recipe:
2 cups gluten free all purpose flour
1/2 tsp baking soda
1 tsp baking powder
1 tbsp ground cinnamon
¼ teaspoon salt
2 tbsp canola oil or coconut oil
¼ cup coconut sugar or jaggery powder
¼ cup date syrup or brown rice syrup
1 ½ flax eggs (4 ½ Tsp ground flaxseed + ¼ cup water, whisked together, set for 10 mins)
1 tbsp vanilla extract
1 1/2 cups grated zucchini
¾ cup chocolate chips
Mix together flax egg and let sit
Whisk dry ingredients
Whisk wet ingredients
Add wet to dry
Fold in zucchini and chocolate chips
Scoop into muffin tins
Bake at 180C/350F for 25-27 minutes
