Bean soup Creole style

An easy to make hearty soup for cold winter nights! 🙂

Ingredients:

– 2T butter
– 1C bell peppers
– 1C onions, chopped fine
– 1/2 t chili powder
– 1T paprika
– 2 bay leaves
– 3C beans
– 1C white wine
– 3C veg broth [rml_read_more]
– 1C parsley
– 1T oregano
– 3 cloves garlic, minced
– 1C celery, chopped

Method:

Soak the beans in warm water for an hour. Meanwhile, chop, mince the rest of the ingredients. “Sweat” onions in the butter. Add the bell peppers and celery and saute till all are soft. Add bay leaves and garlic and saute for no more than a minute. Add the rest of the ingredients except 1/2 the parsley and all the oregano. Cook on low heat for an hour or till the beans start to melt into the mix. Remove the bay leaves and using a hand blender, blend the mix. Add the rest of the parsley, oregano and simmer for 15 minutes.

Serve with Creme fresh and some hot sauce.
