Buttermilk Biscuits – Vegan!

For when you gotta have some comfort food, but you want to keep it #plantbased and #simple ! This recipe is pretty much fool- proof and requires very few, easy to find ingredients. Great for your kiddos to eat and help make, too ?

Recipe:
250 mL almond milk
15 ml lemon juice
250 g Maida (all-purpose flour)
1/2 tbsp baking powder
1/2 tsp baking soda
1 tsp salt
56 g cold vegan butter

  • add lemon juice to milk to make ‘butter milk’, set aside
    -Combine dry ingredients, whisk together
    -Cut butter into small cubes and combine with dry ingredients using a fork or pastry cutter
    -Combine into mixture is texture of sand
    -Slowly add ‘butter milk’ to form dough
  • roll out on well floured surface and use biscuit cutter (or a floured glass!)
  • Brush tops of biscuits with more melted vegan butter
    -Bake for 10-12 min
    -serve hot with vegan butter and jam ?
