Simplest of dishes to make. Takes no more than the time to boil spaghetti but tastes divine! Most , important- use very good quality olive oil (EVOO).
1 small bunch of thin spaghetti
2T chopped parsley
2t fresh oregano
3 cloves of chopped garlic
2T grated romano
1/2cup of fresh mozzarella cheese, diced
Put the spaghetti to boil and meanwhile chop all ingredients. Once the spaghetti is done. Stop the cooking by running it quickly under cold water. Add 3-4 tablespoons of EVOO to it. Saute the garlic in some EVOO for no more than 30 seconds, add oregano to it. Pour over the cooked spaghetti and mix in the rest of the ingredients. Garnish with a bit of crushed red pepper (optional) and you are done.
