Jenny (and Rachel Ray)’s veggie chili

1 red onion, 1 green pepper, 1.5 jalapeños, 6 cloves garlic- all chopped

Sauté the above veggies in olive oil, then add roasted ground cumin, chili powder, coriander powder and salt to taste. Cook til veggies are soft and cooked thru.

Add 1/2 pack gimme lean sausage flavor, 1 can black beans, 1 can pinto beans, and one can veggie refried beans, 2 cans chopped tomatoes, 1 cup veggie stock, mix and simmer on low for ~20 min

Serve with grated cheese and chopped onion on top!
