Herb Roasted Potatoes

When you have very little prep time left but more time to chill. Try this dish with dill. OK that was a bad one. 😛

Ingredients:

-8-10 baby potatoes
– 3 cloves garlic, diced
– 2T chopped parsley. I add 2T because I like parley (ask my family!). You may want to add less.
-1T dill, roughly torn
– 1t sea salt
-1t ground black pepper [rml_read_more]
– 1T olive oil (don’t waste extra-virgin olive oil as it will be heated)

Method:

Pre-heat oven to 375 F. Clean and mix the potatoes with the olive oil, garlic and half the parsley in an aluminum foil and bake for 40 minutes. I’d suggest checking after about 30 minutes using a fork to see if they are done. Once they are done, let them rest for 5 minutes. Take them out and garnish with the rest of the parsley, sea salt, ground black pepper and dill.
