Lemon Pound Cake – Starbucks Style – all Vegan!

Starbucks copycat lemon loaf- but make it completely vegan ! You have to taste it to believe it! Surprisingly simple to put together and healthier (and cheaper) than the original ?!

1 cup (200g) sugar
1/2 cup (100g) canola oil
1 tsp lemon extract
1 tbsp vanilla
2 tsp lemon zest
1 cup vegan yogurt
1/3 cup lemon juice
2 cups (250g) maida (flour)
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 cup powdered sugar, sifted
1 tbsp almond milk
1 tbsp lemon juice

Preheat oven to 180 C
Add first five ingredients and whisk well
Then add lemon juice and yogurt, combine
Mix dry ingredients and add slowly to wet
Do not over-mix- only until combined
Pour batter into loaf pan
Bake for 50-55 min until toothpick comes out clean
Allow to fully cook
Combine powdered sugar, lemon juice and almond milk (last 3 ingredients)
Pour icing over loaf and enjoy ?
