Bittermelon Salad

This is one of the simplest of recipes that takes very little time to make, yet tastes delicious.

Ingredients:

– 3 bittermelons (you can find these in Asian grocery stores), chopped
– 1/2 onions
– 1 small bunch of cilantro
– 1 small pinch cayenne pepper powder [rml_read_more]
–  oil for frying

Method:

It is very essential to wash the bittermelon. The fastest way to remove some of the bitterness is to add salt and leave it for about 10-15 minutes then wash it about 4-5 times in water. Place the chopped bittermelon on paper towels and pat it dry as much as possible and stand about 10 minutes. Next, put them on fresh paper towels on a large plate (important!) and microwave for about 10-13 minutes on low power. Open the microwave door every 3 minutes and let the steam out. Meanwhile, dice the onions and chop the cilantro. Once the bittermelon pieces have dried, flash fry them in hot oil. This process should not take more than 15-30 seconds. Drain the pieces on new paper towels, sprinkle the cayenne pepper powder, salt and mix it gently with the onions and cilantro and serve.

Goes very well with cold beer. 🙂
